I wanted to share this cute little pink cocktail with you seeing as it's Friday and happy hour is upon us!

I got inspired trawling Pinterest, as you do, and have been swept up in the Dragon fruit craze. Also know as Pitaya, this hot pink super food is taking over the Insta-foodie world with it's pretty pink smoothie bowls flooding my feed and giving me major food envy.

And yes, i know it's a superfood and probably belongs beside some granola that's sugar, dairy, nut and everything free but this lady is mixing it with Vodka.

It looks like it would be good for you and that's enough for me right now.

This would be the perfect drink for a girls night, or you could make a booze free version for a girl themed baby shower but it's just as special for an overtired, slightly stressed out mama of two on a Friday.

Yasss.

I bought some freeze dried Pitaya chunks from here and steeped it into my vodka for a few days to let it infuse. You could also use the powder that's now becoming readily available at health food stores and mix it in a shaker as you go. Beware a little goes a long way, a pinch will give you that brilliant colour. Now I haven't tried it with fresh Pitaya but you could muddle some with your vodka then strain and add your mixers. Whatever you fancy.

The Modern Mother's Cocktail.

Ingredients.

Freeze dried pitaya powder.

Vodka of choice. I've used Crystal Head.

Tonic or soda water.

Flavoured Kombucha of choice. I like ginger & lemon and my favourite brand is Remedy. 

Lemon slices or mint leaves for garnish.

Method.

Steep 1/2 teaspoon of Pitaya powder in 500 mls of vodka for 12-24 hours. Fill glass with ice and add a shot of the infused vodka, a shot of Kombucha and lemon slice. Stir gently to combine and top up glass with tonic or soda water.

Garnish with more lemon or some mint leaves if desired.
